Pistachio-Filled Cookies

Ingredients

• 1 Egg • 30 g Coconut Oil • 1 Teaspoon Vanilla Extract • 70 g Coconut Sugar (or preferred sweetener) • 110 g Almond Flour • 110 g Oat Flour • 1 Teaspoon Baking Soda • Pinch of Salt • Chopped Pistachios • Sugar-Free Chocolate Chips • Nut Dreamers Pistachio Spread

Preparation

1. Preheat your oven to 350°F (175°C). 2. In a bowl, mix together the egg, coconut oil, vanilla, and coconut sugar until smooth. 3. Add the almond flour, oat flour, baking soda, and salt, and mix until a uniform dough forms. 4. Fold in the chopped pistachios and chocolate chips. 5. Chill the dough in the refrigerator for 30 minutes. 6. Roll the dough into balls, press a small indentation in the center with your thumb, and fill each cookie with Pistachio Spread. 7. Place on a baking tray lined with parchment paper and bake for 15–20 minutes, until lightly golden. 8. Allow them to cool completely so they don’t break… and enjoy this dreamy pistachio treat! 💚
